My name is Cristi Dame and I am a pancake snob.

Confession: I am a pancake snob. I am in love with Bisquick pancakes. I mean really IN LOVE with them. Last night after blogging, I was dreaming about pancakes and couldn't wait for morning so I could sink my teeth into a warm stack of delicious pancakes. Another confession: I CRAVE pancakes when Brooks is out of town... it must be  my comfort food of choice... good thing he comes back tonight! You see, as a young girl I remember climbing up on a bar stool watching my Grandpa George flip these fluffy delicate pancakes. The smell of freshly cooked pancakes brings back so many memories. Yes, I am a pancake snob...to me there are not many other pancakes that compare to my Grandpas. 

  


Due to years of making pancakes from this yellow box I have no need of following the recipe...it is just my pancake intuition.  MMMM look how fluffy? And most importantaly- I NEVER flatten them with a spatula! I cringe when I see that... it takes patience people!   
  

Then, still warm, I cover them with whip cream and berries and wash it down with a cold glass of milk. Todays choice: blackberries. MMMM. Today, I sat down and mindfully enjoyed each and every bite of my stack of pancakes. Today is going to be a good day. Nixon and I are having and PJ and pancake party. No really, we are still in our our PJs...

  
Love you Grandpa...one day we will be eating pancakes together again.

We love Pancakes at our house too!!! Over the years of making them (from the yellow box also) we have ventured into adding things like fresh bananas into them, or homemade freezer jam, blackberry is my families favorite... Of course my children's favorite of all time is the mini chocolate chips added in! yumm!

i, too, am a pancake snob. i should send you the recipe for my homemade pancake mix. it's like bisquick, but better. yes, i said better. if you're interested, let me know. you end up making it the same as bisquick...it's just the dry mix part i have the recipe for. mmmm. pancakes.
